Ingredients

The base of this copycat Sweetgreen bowl is arugula. However, you can use whatever green you like, whether it's mixed greens, spinach or kale. The next base is purple cabbage, I've made this salad with shredded Brussels Sprouts as opposed to cabbage and it still has that super crunchy factor that the purple cabbage adds.

How to make this Sweetgreen Elote Bowl

  1. In a bowl, lay your base of arugula.
  2. Top with the remainder of your toppings.
  3. In a food processor or blender, blend together your dressing ingredients.
  4. Dress with the lime cilantro jalapeno viniagrette.
  5. Toss and enjoy!

Substitutions and variations

  • arugula - like I said earlier, you can use mixed greens, spinach or kale
  • shredded cabbage - brussels sprouts or green cabbage
  • goat cheese - feta or cojita cheese
  • tortilla chips - gluten-free chips/crackers or baked tortilla chips
  • spicy sunflower seeds - you can omit or use any nut you prefer or have in your cabinet
  • warm quinoa - brown or wild rice

Ingredients

Sweetgreen Corn Elote Bowl

  • 2-3 cups arugula
  • 1 cup roasted corn + peppers
  • 4-5 cherry tomatoes
  • .5 cup shredded cabbage
  • ¼ cup cilantro
  • ¼ cup goat cheese
  • ¼ cup tortilla chips
  • 4 tablespoon spicy sunflower seeds
  • ½ cup warm quinoa

Lime Cilantro Jalapeno Vinigrette

  • 1 lime juiced
  • 1 jalapeno seeded
  • 2-3 tablespoon olive oil
  • 1 clove garlic
  • ½ cup cilantro
  • ½ tablespoon cumin
  • salt + pepper to taste

Instructions

  • In a bowl, lay your base of arugula.

  • Top with the remainder of your toppings.

    Um, any tips on how to season and roast the corn and peppers, which are kind of the heart of this dish?

      Yes! I like to do chili powder, garlic powder and onion powder. I also used a canned elote mix from Aldi which was pretty flavorful.

    Review is for the dressing, which was very good but also very spicy even with the jalapeño seeds removed!
