What exactly makes red velvet? In order to get the perfect flavor of red velvet, you’ll need to balance the flavor of mild cocoa, vanilla, and buttermilk.

In the case of these keto red velvet recipes, the flavor profile is achieved by using a combination of vinegar and heavy cream to get the tangy flavor of buttermilk.

In some of these keto recipes, you’ll also notice the use of cream of tartar to further enhance the tanginess flavor factor.

This in combination with a smaller amount of cocoa powder and the use of cream cheese frosting or icing ensures that the recipes are not only delicious but low enough in carbs to be able to enjoy while doing keto.

Best Sugar-Substitutes For Keto Red Velvet Recipes

As far as the best sweeteners for these sugar-free red velvet recipes, I recommend the use of Lakanto’s granulated sugar substitute it’s their erythritol and monk fruit sweetener that is as close to sugar as it gets.

Having said that, you can also use the brand Swerve which is an erythritol blend. Similar to Lakanto it uses sugar alcohols and has a 0 % impact on blood sugar.

You could also use the stevia and erythritol-based brand Pyure if you prefer to use a stevia-based sweetener. I will however add that we are not sure why but chocolate and stevia do not always place nice and can intensify the aftertaste of stevia.

It’s not my preference to ever use stevia in chocolate recipes for this reason. Due note, that if this is your pick make sure you reduce the amount called for in the recipe by half since it’s a much sweeter option.

If you can’t easily find a more natural sugar substitute, you can also use Splenda with good success. I know not everyone would agree with me here and I respect that but in my book, it’s still better than regular sugar.

If the recipe calls for the use of a powdered sugar substitute for cream cheese icing or frosting, it must be a confectioner’s sugar substitute sweetener and it’s why I defer to the only two I use regularly.

My favorite brands are Lankanto’s monk fruit blend or Swerve that is another erythritol blend.

The use of cocoa powder was a way to soften the flour and help produce a finer textured cake. During World War II the shortage of food made baking items became very rare to acquire.

Finding basic ingredients where nearly impossible to find. This meant that cocoa powder was not something you could just pick up at your local grocery store.

So bakers became very creative and instead of using cocoa powder, they added beet juice to mimic the color of chocolate and to keep their baked goods moist.

This explains why red velvet desserts do not have a strong chocolate taste and the back story to the red color that makes them stand out.
